Tom Kha Paste
Tom kha paste is an aromatic Thai spice paste that forms the basis for the creamy, spicy-sour tom kha coconut milk soup and typically contains main ingredients such as galangal, lemongrass, kaffir lime leaves, chili, garlic, and shallots to create an authentic Thai flavor that is slightly spicy, lemony, and savory. It is simply mixed with coconut milk, meat (often chicken), or vegetables to quickly prepare an exotic soup.
Use:
Soup base: The paste is dissolved in hot coconut milk and cooked with proteins (chicken, shrimp, tofu) and vegetables (mushrooms).
Braising: Can also be used as a base for other braised dishes to achieve the characteristic flavor.
The paste offers a quick way to achieve the balance of sweet, sour, salty, and spicy that is typical of Thai cuisine.
