Tamarind and Sweet Soy Marinade
Bumbu Komplit Kalasan is an Indonesian ready-made spice mix for preparing Ayam Kalasan, a sweet and spicy fried chicken dish from Central Java. It combines herbs such as garlic, coriander, ginger, turmeric, lemongrass, and tamarind and is used as a marinade for braising (ungkep) chicken, tofu, tempeh, or eggs before deep-frying until golden brown.
Preparation:
Evenly coat 1kg of chicken, meat, tofu, tempeh, squid, or hard boiled eggs with Kobe Tepung Ayam Kalasan for 10 minutes or overnight in refrigerator. Add one glass of water (250cc) and cook over low heat until water completely evaporates. Fry in hot oil until golden brown.
