Sushi seasoning
Sushi seasoning (sushi-zu) is a sweet and sour mixture consisting mainly of rice vinegar, sugar, and salt, which is added to warm, cooked sushi rice to give it its characteristic shine, flavor, and consistency. It is an essential seasoning for authentic sushi, making the rice slightly sticky and creating a balanced sweet and sour flavor that complements the other ingredients.
To prepare sushi rice, add 3 tablespoons of the seasoning to a cup of cooked sushi rice in a shallow bowl. Fold the seasoning into the rice with a wooden spatula and then allow the rice to cool to room temperature. Your sushi rice is ready!
The seasoning can also be used for pickled vegetables, seafood marinades or as a salad dressing without adding oil.
