Terasi Bakar (or Trassi Bakar) is an intensely fragrant, roasted Indonesian shrimp paste that serves as an essential seasoning base for sambals, curries, and soups. Made from fermented baby shrimp and salt, it is dark brown, firm, and has a strong umami flavor. The prior roasting process makes it ready to use, adding aromatic depth to dishes.
